Alain Sailhac was a French chef based in New York City. Sailhac was the executive vice president and dean emeritus at The International Culinary Center. He was the Executive Chef at Le Cirque, where he worked from 1978-1986. He also held positions at the 21 Club, the Plaza Hotel, and the Regency Hotel. Sailhac was welcomed into the Maîtres Cuisiniers de France (Master Chefs of France) in 1984. The Alain Sailhac Notebooks from Le Cirque (dated 1982-1985) consists of six notebooks belonging to, and created by, Alain Sailhac, from his time at Le Cirque restaurant. The notebooks, originally stored in three-ring binders, contain handwritten daily menus and meal prices.
